Looking into web form analytics services, and boy are there a lot of them!

I haven't been able to find one that has (or at least advertises having) the ability to track inputs that may be appended or removed from the form. I'm assuming such a thing would be done via a Javascript API, where you tell the analytics "hey, this input has been added/removed".
