    I know its really stupid but I'm so bored lol...

    Very little of the header (all that "xml", as you say) really matters, though I'm not sure what would be needed for a valid image.

    The rest is just character-representation of bytes that make up the image. You could change them, but with no idea what they do, you'd have no idea how to control any changes, and you would likely change a component that would add up incorrectly, corrupting the image. Additionally, notepad can fail to support some of the needed characters for images like that, as they use full 256 'characters' to represent an image.

    You can edit anything in notepad, though it will crash at times. I loaded my 50mb mysql backup in there. It died. And that's just text. Movies can be interesting as well.

    Once in a while you can get something useful from a corrupt file, especially if it was partly generated from text, like a MS Word doc. It has at least SOME reasonable characters in it.

    It would be more likely that you could determine something of the pattern then create an image generator of some sort, using random numbers within acceptable ranges as the characters (ordinal values of the characters from the numbers, that is).
    However, that's fairly complex
