I have a job interview with a major company in 3 months time and hope to become an Apprentice/Junior Software Engineer with them. I’ve spent the last few months trying to learn the basics of Java reading some Java blogs and watching youtube.
It’s all so overwhelming and not all of the information is sticking in my head. I’m not looking to master the programming language, but if I can at least get to a level where they’ll take me on as an apprentice.

Congrats on the interview success! Great experience you may get here, I suppose. With tons of practice, you can quickly shift from the Junior Developer to the Middle one.
Moreover, Java is very popular and it doesn't seem to lose this status. Then you may involve in Android apps development, why not. (popular niche)

This is impossible. A lot of devs telling me that even after couple years they started to understand what exactly they are dooing.
