I have been trying to find a script that listens to my iTunes and then updates some information on my website with that current track information. I am not sure if this is going to entail the use of FTP, PHP, MySql.
If anyone could help me out with this it would be greatly appreciated.

This is not possible without writing a plugin for iTunes or something for the client side. To do this entirely yourself would be considerable work for little gain. Instead, I'd use a service that already provides this such as Last.fm (http://www.last.fm/). They provide xml feeds so you could incorporate it into your website through simply reading the feed.
