Does anyone know how to change this logo???

Under the 'General' tab in the Administrator Control Panel, go to Manage board logos under the Board Configuration section in the sidebar.

Go to styles -> imagesets -> * -> "main logo" and change it.

To make the new logo available, just upload it to ./styles/*/imageset/

Do this for each skin.
