I would like to take a production video provided to me by a travel company, rework it, put it into a good looking frame, have a menu and be able to play that video. I'm thinking I need to plant the video onto my server. I've played with YouTube and realized that if they decided to remove the video my link would vanish as well. Besides I would like to have much better looking quality.

Really I'm new at the whole video thing but have worked with stills for decades.

A basic course or program would be great.

There are links on the page with advice on converting to flv.

Try and get the earlier version 3.17 as its easier for a beginner to customise. (I'll try and find a link but I cant find on right now)

I got it wrong - its last version (before version 4 which allows custom flash skins) is 3.16 http://code.jeroenwijering.com/trac/browser/tags/mediaplayer-3-16.zip

be sure to read the info here http://code.jeroenwijering.com/trac/wiki/Mediaplayer3 re: supported flashvars, playlist formats, embedding the player and javascript functions which will allow you to get some really creative custom setups.

I've used it quite a lot (at least 8 different versions/configurations with and without playlists/javascript) so I might be able to help with your setup it you get stuck.
