Default Text Colour

I'm new to css and am confused a bit.
I know how to apply styles to text in my pages that are <p>
or <li> or links...

But I have some information on my pages that is generated without <p>
How can I set default text styles?

Same way you do with <P> or <LI> just use body



body {
color: Black;
}
